With this line we return to the tradition of the old wines for festive occasions: wines which the vintners in the Languedoc used to make for the special family feasts. Such wines were made from vineyards that had relatively low yield and that were treated with particular care.
Most importantly, however, the time of harvest was chosen with utmost care. Time and again the vintners went into the vineyard, picked one grape here and one there, pitted them, took a bite and slowly tasted the acidity and tannin. They debated with their children about this and tasted again until the juice was very ripe and full of expression and any bitterness, any green note had disappeared from the pit and the tannin felt pleasant in the mouth. Then the wine was harvested.
In this tradition, we now make wines for festive occasions again.
